Shakshuka - perfect for breakfast, lunch or dinner, this is a simple and tasty dish.

Anything with eggs is always going to be a favourite for me! And what’s not to love about stewed onion, peppers and tomatoes cooked down to make a delicious sauce to poach eggs?

I like to add a little harissa for some heat and it’s best served with pita bread or whichever bread you prefer.

You’ll need a large frying pan or skillet with a lid for this dish.

Ingredients

  • 6 medium tomatoes, chopped

  • 1 red pepper, finely diced

  • 1 large onion, finely diced

  • 2 cloves garlic, crushed

  • 1 tbs olive oil

  • 1 tbs harissa

  • 6 eggs

  • salt and pepper to taste

  • parsley for garnish


Instructions

  • Sauté onions and peppers in the olive oil until the are soft, about 10 minutes.

  • Add garlic and harissa and continue to sauté for 1 minute.

  • Add the chopped tomatoes, salt and pepper to taste, and stir to combine.

  • Turn down the heat and place a lid on the pan and gently cook until the tomatoes are soft.

  • Make 6 wells in the sauce and crack an egg into each well.

  • Place the lid back on the pan and cook until the eggs are cooked to your liking.

  • Serve hot or warm with warmed pita and parsley for garnish.
