Shakshuka - perfect for breakfast, lunch or dinner, this is a simple and tasty dish.
Anything with eggs is always going to be a favourite for me! And what’s not to love about stewed onion, peppers and tomatoes cooked down to make a delicious sauce to poach eggs?
I like to add a little harissa for some heat and it’s best served with pita bread or whichever bread you prefer.
You’ll need a large frying pan or skillet with a lid for this dish.
Shakshuka

Ingredients
6 medium tomatoes, chopped
1 red pepper, finely diced
1 large onion, finely diced
2 cloves garlic, crushed
1 tbs olive oil
1 tbs harissa
6 eggs
salt and pepper to taste
parsley for garnish
Instructions
Sauté onions and peppers in the olive oil until the are soft, about 10 minutes.
Add garlic and harissa and continue to sauté for 1 minute.
Add the chopped tomatoes, salt and pepper to taste, and stir to combine.
Turn down the heat and place a lid on the pan and gently cook until the tomatoes are soft.
Make 6 wells in the sauce and crack an egg into each well.
Place the lid back on the pan and cook until the eggs are cooked to your liking.
Serve hot or warm with warmed pita and parsley for garnish.
