Bacon marmalade

Isn’t everything better with bacon? Bacon marmalade is a tangy, bitter, sweet and savoury condiment that is the perfect addition for a burger, a grilled cheese sandwich or some grilled chicken. Full confession, it’s also great just on a spoon.
There’s a lot of chopping involved for the preparation, but after that, it’s an easy recipe to make, a little decadent and utterly delicious.
Bacon marmalade
Servings: 2 cups
Ingredients
1 lb thick bacon, chopped into 1/4 inch slices
1 sweet onion, finely diced
2 oranges
2 tbs minced garlic
1/2 cup brown sugar
1/4 cup sherry vinegar
1/4 cup maple syrup
1/4 cup bourbon
1 tsp English mustard powder
1 tsp salt
Instructions
Wash and peel the oranges, keeping the peel to one side.
Dice the oranges into 1/4 inch pieces.
Remove as much of the white from the orange peel and discard.
Julienne the orange peel as finely as possible.
Cook the bacon in a medium sized saucepan over medium heat until crispy.
Drain the bacon and set aside.
Sauté the onion in 1 tbs of the rendered bacon fat until soft and translucent.
Add the minced garlic and stir for one minute.
And the rest of the ingredients and lessen the heat to low.
Simmer gently for one hour until everything has softened and you have a jam-like consistency.
Move to jars to cool before using.
