Comfort food at its finest. Pork, slowly braised in sauerkraut until it is falling-apart tender and still juicy from the braising liquid.

This is a set it and forget it kind of a dish. It takes a little prep at the start of the day and you’re left with a perfect dinner dish waiting at the end of your work day.

I like to serve this with boiled red skin potatoes and vegetables. It’s a hearty meal for a cold, snowy day, and reheats or freezes beautifully.

Braised pork shoulder with sauerkraut

Servings: 8-10

Ingredients

  • 4 lb bone-in pork shoulder.

  • 2 onions, sliced.

  • 3 cloves garlic, chopped.

  • 2 tsp salt.

  • 1 tsp ground caraway seeds.

  • 1 litre sauerkraut, including the liquid.


Instructions

  • Add all the ingredients except the pork into a slow cooker and mix to combine.

  • Add the pork to the centre of the crock pot, ensuring the sauerkraut mix is surrounding the pork.

  • Place the lid on and cook on low for 8 hours.

  • Once the pork is cooked, remove and shred before mixing back in with the sauerkraut.

  • Serve hot with sides of your choice.
