Braised pork shoulder with sauerkraut

Comfort food at its finest. Pork, slowly braised in sauerkraut until it is falling-apart tender and still juicy from the braising liquid.
This is a set it and forget it kind of a dish. It takes a little prep at the start of the day and you’re left with a perfect dinner dish waiting at the end of your work day.
I like to serve this with boiled red skin potatoes and vegetables. It’s a hearty meal for a cold, snowy day, and reheats or freezes beautifully.
Braised pork shoulder with sauerkraut
Servings: 8-10
Ingredients
4 lb bone-in pork shoulder.
2 onions, sliced.
3 cloves garlic, chopped.
2 tsp salt.
1 tsp ground caraway seeds.
1 litre sauerkraut, including the liquid.
Instructions
Add all the ingredients except the pork into a slow cooker and mix to combine.
Add the pork to the centre of the crock pot, ensuring the sauerkraut mix is surrounding the pork.
Place the lid on and cook on low for 8 hours.
Once the pork is cooked, remove and shred before mixing back in with the sauerkraut.
Serve hot with sides of your choice.
