Elote is a wonderful addition to a summer BBQ or outdoor dinner. This is an easy side dish that accompanies burgers, chicken or steaks and can also be enjoyed alone.
Anticipate you will get a little messy eating this, so keep the napkins close at hand!
Elote (Mexican street corn)
Servings: 4
Ingredients
4 ears of corn.
1/3 cup crema (use sour cream if you canβt find crema).
1/3 cup mayonnaise.
1 clove garlic, crushed.
1/2 tsp chili powder - I used 1/4 tsp ground ancho powder and 1/4 tsp ground chipotle powder.
1/2 cup finely grated cotija cheese.
salt and pepper to taste.
Chopped cilantro, lime wedges and tajin for garnish.
Instructions
Clean husks and silk off corn ears.
Preheat BBQ or grill.
Place into a pot of boiling water and boil for three minutes.
Once the corn is tender, move to BBQ and grill, turning frequently until lightly charred on all sides.
Mix together crema, mayonnaise, garlic, chili powder, and salt and pepper.
Brush the sauce mixture over the corn ears and roll in cotija cheese until evenly coated.
Sprinkle with cilantro, a squeeze of lime and a dusting of tajin to your taste.
